Does qBittorrent have a feature like Vuze whereby, to safeguard privacy in the event of a VPN disconnect, it can be configured to only be active with a VPN connection?
Also, can ipv6 be disabled to avoid any potential leaks?
Any help would really be appreciated.

You could try it yourself...
For the first: Tools->Options...->Advanced->Network Interface and choose your vpn interface. I haven't ever used vpn but I assume it registers a network interface. Normally if qbt is configured to only use that interface, it should stop working if the interface is down. But check it yourself.
For the second: I don't think there is an option to disable ipv6
