If I decide to update qBittorrent will all of my paused torrents be retained or will they be lost?

Updating qBittorrent shouldn't cause any issue with your torrents. However, if you reaaally don't want to lose those torrents, you can just backup the %LOCALAPPDATA%\qBittorrent folder.
