When I know a torrent has just started, but qbittorrent crashes and looses its place -- how can I get qbittorrent to abort the recheck and just start from the beginning again?

Did you check the "Save path" on the main screen.
If you use explorer to delete the corresponding entries, there should be nothing to "re-check"
I have seen multiple torrents incoming to the same dir, but when I hit things (that I think) are like what your're saying,
I delete all the *.!QB files in the sub-directory.
