cant stop seeding

Hi, I am very new to downloading torrents so please excuse me if my questions are stupid.
I run windows 7 64bit on IE11..
My downloads go to my "Downloads" file. I would like to move some torrents to the top to ensure priority but have been unable to find out how to acheive this.
Also I dont know how to "Stop" seeding.
I ran Utorrent for a very short time but found that I could delete torrents on my Utorrent page but the downloads would still be on my "Downloads" page. I have deleted torrents on Qbittorrents page and they are also deleted from my downloads page.
Clearly I am doing something wrong but I have no idea what. May I ask for help on these matters. I would very much appreciate idiots terminology. Thanks.

For the priority part, enable "torrent queueing" in options.

If u want to keep the files on your computer after removing a torrent, then...
make sure u check "confirm torrent deletion" under options > advanced. When u delete a torrent, a prompt will popup and make sure the checkbox is unchecked.

You pause a torrent, it will stop seeding.
