Just wondering if I will be at risk using an older version of qbittorrent? Currently using 3.1.12 and see that there is a newer version available, would like to just stick with this version since it's been working so well. Will I be at any risk if I continue to use an older version? Or is it safer to use the latest version?

Of course it's safe.
You can use uTorrent 1.6.1 or something and even that would work.
The only thing you will miss is the new features/improvements. But that's all.
Ps.: For example NAS devices have very old clients usually, and yet they work just fine.
